Vegan Tteokbokki
Ingredients:
¼ cup gochujang (I used quality gochujang from @gothamgrove)
1 lb frozen fresh rice cakes
2 tbsp garlic (both fresh & dried, minced)
¼ head Savoy cabbage (Seung likes to use about 4 cups)
Gochugaru (optional, if you want the extra heat)
1 cup water
Toasted sesame seeds (optional garnish)
Method:
In a large pot, over medium heat, mix together water and gochujang until incorporated. Then add the garlic, rice cakes, and cabbage. Simmer until reduced to your liking. Remove from the pot and plate on a dish, garnish with toasted sesame seeds if using.
