Roasted sunchokes with crème frâiche & mushroom powder

Ingredients: 

  • 1 lb sunchokes (cut into bite size if needed)

  • Cooking oil (chive oil or vegetable oil)

  • Salt

  • 2 - 8 tbls crème frâiche (however much you desire)

  • Mushroom powder (optional garnish) 

Method: 

Preheat your oven to 425F. Line your baking sheet with parchment or aluminum foil (for easy clean up). Put the sunchokes on the baking sheet, drizzle a generous amount of cooking oil (I used chive oil made using vegetable oil). Sprinkle some salt and stick it in the oven for 25-30 mins. When the sunchokes have browned to your liking, (I like mine chewy on the outside, super creamy inside), carefully place them in a bowl. Scoop 2-8 tablespoons of crème frâiche on the side. Dust the bowl with your favorite mushroom powder.
