One-pan Paleo breakfast

Ingredients:

2 strips of bacon 

1 medium sweet potato (cubed)

¼ cup red bell peppers (cubed)

1-2 spicy pepper(s) of choice

3 - 4 Brussels sprouts (separated)

2 eggs

2 scallions

Pinch of salt

Method:

Cut bacon into small pieces and sautée on medium heat in a medium sized skillet until about 50% done. Add sweet potatoes and cook for about 5-6 mins. Then add red bell peppers, spicy peppers (if using). When the sweet potatoes are cooked through and fork-tender, add leaves of the Brussels sprouts, make room in the center of the pan and crack the eggs directly into the pan. Now cover and turn the heat down to low. Wait until the egg whites are fully cooked, about 2 mins. Remove from heat and garnish with scallions (if desired) and lightly season with salt of choice (I used kelp salt).
