One thing I am going to keep from 2020 - this quick and dirty tofu thread salad thing-y ๐ฅข
Tofu threads available near the edge of tofu & bean sprout corner @hmartofficial (in vacuum sealed packaging). I warm it up in the microwave, then top it with my "dressing" which is basically equal parts slutty sauce (or chile crisp & sugar)+ soy + apple cider vinegar chopped green onions and sawarak pepper (white pepper), oh wait, rewind, you need to simultaneously heat up some lard until u see smoke and pour that hot oil over the green onions. Mix mix mix, and slurp and experience glistening lips ๐ and happy stomach.
Seaweed risotto ๐ค #ad
Pare (green laver) is unprocessed seaweed that has scent that reminds me of green tea and citrus from charred lime peels. Korea peninsula, surrounded by the ocean, has an ideal terroir for variety of seaweeds to count - although gim (flattened sheets of dried seaweed/ in Japanese - nori) is the most well known.
Highly influenced by @atoboynyc seaweed rice, I created pare risotto. First, soak pare in water until it softens, about 30 mins up to overnight - then puree. Now you have a pure pare puree. Try saying that 10 times faster. ๐คฃ
Once you have pare puree, rest is simple. Follow a basic risotto recipe - fold in the puree along with the broth and stir constantly to create creamy delectable. Finish with grueyere (or other melty cheeses) and top with a little bit of uni or an egg yolk!!
If you are too lazy to make a risotto, just boil 1 cup of short grain rice with 6 cups of broth and add 1 cup of pare puree. Simmer until 94% liquid has been absorbed and evaporated. Shave lots of cheese and voila - you have juk/risotto hybrid. ๐

1. Hotel room kimchi w/ usual suspects and unusual suspects (celery?!) ๐ถ๏ธ
2. Jeyook bokkeum - cutting pork with a pairing knife proved to be challenging but, still, delicious. Mama Lee's recipe - tested and true. ๐ท
3. Snap peas and oyster mushrooms w/ leftover bun rieu rice noodles. ๐คจ
4. The best team building exercise is sharing food, amirite? All the festive classics from @the.everyday.korean including bulgogi meatballs, gochujang mayo roasted salmon, japchae, kimchi slaw, and gochujang vinaigrette!! ๐
5/6. Truffle powder from @traderjoes is pure magic. Made fair share of quesadillas using @sietefoods almond tortilla (keto/paleo friendly). ๐คญ
7. Local cured meats and cheeses for my team's distanced "happy hour" ๐ง
8/9. One of the best item to have in an extended stay is rotisserie chicken. It gives so much! Chicken bones = delicious broth and meat used through out salads & sandwiches. ๐
10. Clean out fridge before my departure!! Green apples and Jimmy Dean's breakfast sammy from (lousy) hotel's grab-n-go breakfast turned into a more holistic (?) quesadilla with remaining string cheese. ๐
I am ready to go home. I want my kitchen. ๐ญ This guerrilla cooking in an extended stay series is fun for the first week....and becomes a chore on day 14. ๐
